Eating Healthy....Oregano Chicken Salad

Leslie loves this healthy dish & I love making it, because it is so easy.

Just stir fry the chicken strips (all cut to edible sizes already, courtesy of Cold Storage), season with sea salt, black pepper & then add some oregano for flavour. Absolutely fantastic!!

Layer the serving plate with heaps of vege ie lettuce, japanese cucumber, baby tomatoes. Put the chicken strips on top. For added taste, I fried some oyster mushroom and added them on top.....simply cannot get enough of this.

Of course I also need some side dishes, ie corn and chicken peas (for protein) :-)

We finished off dinner with Indian mangoes, they are simply the best!!. Fragrant, juicy & not sickly sweet - PERFECT!!. (& it does not burn a whole in the wallet like Australian mangoes..). There are loads of Indian mangoes in the market, but look for Ranee - they are to-die-for.

& the best part - Leslie did all the washing up....
